How we engrave your Roselli

Make your knife or axe truly yours with a custom engraving. We use precision laser engraving to create a lasting mark on the blade. Whether it’s a name, date, or a short phrase, your engraving makes each Roselli unique.  Simply add your engraving in the designated engraving box before checkout.

What should I engrave?

The Roselli Big Fillet Knife is a precision tool crafted for anglers and outdoor cooks who demand control, sharpness, and reliability when processing larger fish. Featuring a long 19 cm blade, this knife is ideally suited for filleting fish in the 2–3 kg range, providing the perfect balance between flexibility and stability for clean, accurate cuts.

Forged from Roselli’s premium carbon steel, the blade is renowned for its razor-sharp edge, excellent edge retention, and long-lasting performance. It handles both delicate fillet work and tougher cuts without sacrificing control, making it equally suitable by the water’s edge, at camp, or in the kitchen.

The handle is made from beautifully stained curly birch and treated with linseed oil to ensure a natural, secure grip – even in wet or slippery conditions. Each knife is paired with a handcrafted sheath made from dark, vegetable-tanned Finnish leather, designed to protect the blade and age beautifully over time.

What’s the difference between the Big Fillet Knife and the Small Fillet Knife?

The Big Fillet Knife has a longer 19 cm blade made for larger fish (2–3 kg), giving more reach and smoother fillet strokes. The Small Fillet Knife is shorter and better for smaller fish and finer, more controlled work.

Is the Big Fillet Knife too large for everyday kitchen use?

It works very well in the kitchen for fish preparation. However, it’s specifically designed for filleting larger fish, where its longer blade offers greater reach and efficiency. For everyday prep tasks or smaller fish, a shorter fillet knife may feel more practical.

Which fillet knife should I choose if I mostly fish perch or trout?

For perch, trout, and other smaller species, the Small Fillet Knife is usually the better choice thanks to its shorter blade and higher precision.

Why choose carbon steel over stainless steel for filleting?

Carbon steel can take an exceptionally sharp edge and is easy to resharpen, making it ideal for filleting. Like all carbon steel, it benefits from simple care to maintain its performance over time.

Can I use this knife on a boat or in wet conditions?

Yes. The handle provides a secure grip even in wet conditions. As with all carbon steel knives, a quick rinse and dry after use helps keep the blade in excellent condition.

No shortcuts are taken – we make everything by hand, from fantastic local natural materials, using old blacksmithing techniques, in a local workshop in Harmoinen Finland. Here, everything is manufactured in much smaller quantities, which ensures that we can minimize our waste and footprint on the environment.

Our products are made from the finest natural materials and raw materials that follow the highest ethical standards. High-quality carbon steel, Finnish curly birch and Finnish natural tanned leather form the basis of all our products. Our locally produced, organic and ethical leather comes from free animals and has been vegetable tanned where only organic material is used instead of destructive chemicals.
